Paste Di Mandorle

Ingredients:
500 g almond meal
375 g caster sugar
2 vanilla sachet
4 egg whites
1 tsp baking powder
zest of 1 lemon & 1 organge

Method:
Mix all ingredients together using wooden spoon. Roll in icing sugar & shape the biscuits.
Bake for 15-20 mins at 160 degrees celcius.

Ossa di Morti Biscotti

Ingredients:
500 gm plain flour
500 gm icing sugar
2 tsp ammoniaca bicarb
4 small eggs
2 tsp ground cloves

Method:
Sift dry ingredients together. Add beaten eggs & knead for 15 minutes with icing sugar. Allow to stand for 5 minutes and knead for another 4 minutes. Then roll & cut into angle shapes. Place onto baking tray & leave for 24 hours. Finally bake in a moderate oven at 160 degrees.

Tiramisu

Ingredients:
1 litre strong coffee (sweetened)
1 cup marsala
40 savoiardi biscuits
600 mls cream
250 gm mascarpone cream
4 tablespoon sugar
3 eggs

Method:
Make coffee, sugar as desired & let cool.
Beat cream, then separately beat egg yolks & sugar together. Then also separately beat egg whites until firm. Fold the egg mixtures into the whipped cream & mascarpone.
Add liquer to coffee. When cool, dip biscuits into coffee and lay them in dish. After first layer, put a layer of cream. Repeat the process until all ingredients are used.
Finish top with the cream & grated chocolate over the top.
